Ginger Cookies

2 ¼ cups all-purpose flour
½ tablespoon baking powder
1 teaspoon ground ginger
1 teaspoon ground cinnamon
½ teaspoon ground cloves
¼ teaspoon salt
¾ cup (1 ½ sticks) unsalted butter, at room temperature
¾ cup packed brown sugar
¼ cup mild molasses
1 large egg
¼ cup granulated sugar (for rolling cookies in)

1) Sift the flour, baking soda, spices and salt together in to a medium-size bowl and set aside.

2) In a large bowl, cream the butter and brown sugar until smooth. Add the molasses and egg, blending well. Slowly the flour mixture. Cover with plastic wrap and refrigerate until firm (at least 1 hour).

3) Preheat the oven to 375

4) Shape into 1-inch balls and roll to coat in sugar on flat plate. Place 2 inches apart on ungreased cookie sheets, flattening each slightly.

5) Bake for 10 to 15 minutes, until golden brown and slightly cracked on top. Let the cookies set on the sheet for 1 to 2 minutes before removing them to cool.
